CARE ADVISEMENT

This blade is fully carbon and care must be taken to avoid rust. Wipe dry after each use and ideally between preparing different products, especially when using acidic and salty products. A patina will form over time helping increase stain resistance slightly. Hand wash and dry only. Store away from liquids and open windows. Keep the blade covered when storing or traveling. Use only on appropriate cutting surfaces such as soft woods and plastics.

We love French knives! They have a rich history, are elegant, and have familiar western profiles that express the joy of cooking we’re so familiar with. They tend to have more slender and  flatter profiles vs their more curvaceous German neighbors, enabling them to perform beautifully with a pull stroke in addition to the standard forward rocking motion preferred by German knives. In fact, French knives largely inspired modern Japanese double bevel knives once trade between Japan and the West opened up during the Meiji restoration. The Japanese took the French profile and further accentuated the flatter and slender style into their gyuto, petty, and sujihiki knives. This is all to say that French knives are fantastic, and fit in between German and Japanese profiles, making them approachable to a wide user base.

Ideal for animal butchery tasks, the bullnose tip of the K Sabatier Vintage 10" American Butcher Knife yields more edge length, lending to longer, more fluid cuts. Manufactured in 1950's, this knife was hand-forged in Thiers, France, a city with a rich knife-making pedigree.
